Some days I am really ready for a change of scenery. The last few days, nay weeks, have been long days writing. Writing my paid assignments, writing for my blog here (unfortunately I don’t pay myself) and writing and planning two books that are at various stages of development. Fortunately I don’t seem to suffer from writers’ block! That’s probably because I spend more time thinking and listening than talking so my real ‘talking’ is through the written word. All these recipes are inspired by her childhood days in Canetown, Victorias, Negros Island when Papa would make these desserts to thrill the kids. ZABRINA’S PINOY OREO CHEESE CAKE Another no-nonsense Filipino dessert recipe from Zabrina. Easy to make and all the family will love it! Follow this recipe for Zabrina’s Pinoy Oreo Cheesecake– Ingredients For at least 15 servings 1 Cup of crushed Oreo cookies 1/4 Cup Butter 1  8 oz. Pack Cream Cheese 1 Pack All Purpose Cream 3/4 Cup Condensed Milk 1 Egg Method  Melt the  Butter and Mix with the crushed Oreo cookies and press to shape it into your aluminum foil  container Mix the condensed milk, all purpose cream and cream cheese until smooth Beat the egg Pour the cream cheese/cream mixture into a pan and bring it to a simmer on a medium heat You can sprinkle some of the crushed Oreos in at…

Zabrina’s Pinoy Mango N’ Toffee No-Bake Cake

ZABRINA’S PINOY MANGO N’ TOFFEE NO – BAKE CAKE Easy to make and no-bake! Follow the recipe for Zabrina’s Pinoy Mango N’ Toffee No-Bake Cake – Ingredients For at least 15 servings 2 CUPS Crushed  Grahams (similar to English Digestive) biscuits 1 PACK Chilled All Purpose Cream 1/2 pack condensed milk 1/4 cup butter Mango  Method Pour Crushed Grahams into the aluminum foil or plastic container Melt Butter and Pour it into the Crushed Graham mix  Mix it then – PRESS to Mold the Base SET ASIDE Pour 1/4 Pack Condensed MILK into a pan  Caramelize (LOW HEAT) to make a Toffee but don’t overdo this as it needs to be runny enough to pour Put bite size sliced fresh Mangoes on top of the Graham biscuit…
